sauces and dressings. The best-known of the sauces may be
pesto--which many people equate with "basil," actually comes
from the Latin word "crushed" and refers to the preparation, not
just the ingredients. Here, then, are three versions of pesto.
GENOVESE - $16
the Ligurian coast: crushed basil, olive oil, garlic, pine nuts
parmesan and pecorino. Served with the traditional Genovese
accompaniments of potatoes and green beans and rigatoni pasta.
SPINACI - $15
delicious pesto made with spinach and served with green linguini.
TRAPANESE - $15
the west coast of Siciliy, pesto includes garlic, basil, parmesan,
extra-virgin olive oil, tomatoes and chopped almonds. Traditionally,
